KITCHEN AND COOKING SKILLS, beginning and intermediate experience
Wednesday, April 24, 2024, 5:00 - 8:00 pm
Many people have some experience with cooking, using a knife and knowing their way around a kitchen, but want more skills, background and experience. In this class, we'll learn some basic cooking and knife skills by making dishes that are full of basic and intermediate approaches to cooking delicious food! We'll approach our training by learning some breakfast and lunch dishes which I chose because of the surprising number of easily-learned new cooking skills and concepts learned with each dish, and the surprising number of new knife skills utilized in the dishes!
Make your own handmade pasta!

Explore the world of making your own pasta at home. We will be making, rolling and cutting thin, flat pasta, called fettucini, broad flat noodles, called pappardelle, raviolis, and multi-colored stuffed pasta. We'll explore different and unique flavors of pasta and fillings, make sauce to go with each dish and have a feast of our creations at the end of class. We DO allow wine to be shared at the class.
Cost is $90 per person, ( plus cost of materials), due at time of registration.

Thai cooking at home

Thai cooking is pungent, spicy, deeply flavored and irresistible. The flavors come from native ingredients and the fact that Thailand has been a crossroads for trade in the Far East for thousands of years. The long development of Thai cooking has given us styles of cooking that are delicious and almost addictive. In this class I hope to introduce styles and flavors of Thai cooking while exposing you to the techniques that are used with common ingredients in the cuisine. We'll share a delicious meal of what we've made at the end of the class.

High Class Appetizers

What is more fun and entertaining than a party of friends getting together to share delicious, surprising and unusual bites that are a cut above the norm? In this class we'll use both familiar and unusual ingredients and techniques to create a truly delicious and unique menu of appetizers, including "Chrysanthemum" tempura made with shrimp and rice noodles, salmon cakes with miso coleslaw, and little savory cream puffs filled with cheddar cream and pickled fresh radishes. The techniques are easy and fun to reproduce at home!
Cost is $90 per person, ( plus cost of materials), due at time of registration.

Decadent Dreamy Easy Desserts
Saturday, APRIL 20 ,2024, 5:00 to 8:00 pm
In this class, we'll dispel the myth that delicious, decadent desserts need to be difficult to make. We'll create cream puffs, chocolate eclairs, rich chocolate tarts, light as air fruit-filled meringue pavlovas and even more. After this class you'll be able to show off some impressive pastry skills that are close to "easy as pie." And, the ingredients are easy to find and not expensive.
Cost is $90 per person, ( plus cost of materials), due at time of registration.

Classes can be held at my proto-professional home kitchen or my commercial kitchen located on our farm in the Applegate Valley, about 14 miles east of Jacksonville at 14553 Highway 238 in the heart of Applegate Wine Country. Or in your own kitchen, or at another venue, or a friend's kitchen if you'd like! We'll cook, learn, eat and drink wine in an intimate atmosphere! Please wear closed toed shoes and casual clothes for cooking. Bring your favorite apron if you'd like!
